Falafel sandwiches with avocado-lime sauce

Ingredients

1/2 small avocado, pitted and peeled

2 Tbsp light sour cream

2 Tbsp chopped fresh tomatoes

1 Tbsp, red onion, minced

1 tsp fresh lime juice

1/2 tsp table salt

15 1/2 oz pinto beans, rinsed and drained

1/2 cup reduced-fat shredded monterey jack cheese

1/4 cup dried plain breadcrumbs

2 medium scallions, thinly sliced

2 Tbsp cilantro, chopped

1 large egg, lightly beaten

1/4 tsp ground cumin

2 tsp canola oil

1 cup(s) romain lettuce, shredded

2 large pita, halved

1/2 lime, cut into 4 wedges

Directions

To make sauce, mash avocado in small bowl. Add sour cream, tomato, onion, lime juice, and salt and stir to combine.

Place beans in large bowl and coarsely mash with fork or potato masher. Add pepper Jack, bread crumbs, scallions, cilantro, egg, and cumin and stir to mix well. With damp hands, form mixture into 8 small patties.

Heat oil in large nonstick skillet over medium heat. Add patties and cook, turning once, until browned and crispy, about 6 minutes.

Divide lettuce evenly among pita halves. Place 2 falafel patties in each pita half and top evenly with sauce. Serve with lime wedges.
